KEY FACTS ABOUT LICORICE EXTRACT

ORIGIN
Licorice Extract is obtained from wild and naturally growing licorice roots, from central Asia, China and Mediterranean countries. Depending on the origin of the raw material and the supply form, the extract offers a versatile taste spectrum, ranging from mild to sweet-aromatic, caramel-like, bitter-sweet and/or spicy.

PRODUCT & SOURCING

LICORICE
Licorice extract is obtained from the root of the licorice plant. The plant grows up to 1m and blooms (violet/blue and white) in late summer.

HARVEST
The main harvest takes place in spring and autumn. The roots need 3-4 years to re-grow after the harvest.

GLYCYRRHIZIN
The active substance of licorice extract is about 30 times sweeter than saccharose. Licorice extract naturally creates a typical sweet taste even at low dosage levels.
PROCESSING BY NOREVO

EXTRACTION
The extraction of the licorice roots is made with hot water and steam. To reduce the water content, the licorice juice is evaporated, concentrated and is subsequently cooked under continuous stirring.

PULVERIZING
Further processing: the Licorice extract is pulverized in a spray tower. Alternatively the licorice extract is re-heated and cast to form licorice blocks.
