Individual Honey Blends
Depending on their botanical origin, honey types vary in color, consistency and taste. From light, liquid acacia honey, to blossom honeys through to dark brownish crystallized buckwheat honey. To match your requirements in sensory, handling and application our honey specialists combine honey types and create new standardized blends.
Honey is a natural bee (Apis mellifera) product. It is ruled in Europe by the EU Directive 2001/110/EC. The Commission of the Codex Alimentarius (Joint FAO / WHO Food Standard Programme) has worked out an international honey standard (Codex Stan 12-1981, Rev.1 (1987), Rev.2 (2001)). Organic honey, i.e. its production, processing and trade, is ruled in Europe by the European Regulation (EC) No.834/2007 on Ecological Agriculture, which defines the quality parameters to be respected by beekeepers and apicultural farmers. Among the 30 – 40 parameters that are checked on honey supplies entering the EU, the following ones are generally known: moisture, diastase activity, HMF, sugar content and sucrose content, adulterations, antibiotic residues, colour.
Honey as an ingredient, sweetening agent, nutrient and flavouring agent
The natural properties of honey allow for a multiplicity of food applications, all of them using the sweetening and flavouring ability of honey, the crunchy effect of honey powder and the nutritional power of bee honey as a source of natural sugars. It is also used as a functional component for the market sectors of health- & baby food, wellness products, nutrition supplements and nutraceuticals.
Subject to the origin of the honey and its containing pollen, in particular the following parameters vary: colour, smell, taste and consistency. The lighter and more fluent the honey is, the milder it usually is. The darker the honey, the harsher and the more intense its flavour is.
Besides that, as honey is a pure natural product, its sensory properties may vary.
That’s why we chose the assigned honey types carefully to match our customers’ application fields and mix them to standardized blends which can be delivered in the same quality the whole year round.
